Healthy Dagwood - Semi-finalist, Arnold Healthy Sandwich Challenge of Detroit

2 slices Arnold Natural Wheat bread
Spicy brown mustard
Fresh spinach, washed
Two soy cheese slices
Red onion, sliced thinly
Fresh cucumber, washed and thinly sliced
Salt-free seasoning (optional)

Spread slices of Arnold Natural Flax and Fiber bread with spicy brown mustard. Cover each slice of bread with fresh spinach leaves. Cover each layer of spinach leaves with a slice of soy cheese. Cover one slice of soy cheese with onion slices. Cover the other slice of soy cheese with fresh cucumber slices. Sprinkle cucumber with salt-free seasoning if desired. Carefully put the sandwich halves together. Cut sandwich in half diagonally and enjoy.
