Onion Compote & Avocado Sandwich - The Offical Arnold Healthy Sandwich of Minneapolis
Developed by Lori Brostrom, St. Paul, MN

2 slices Arnold Natural Health Nut bread
2 tbsp. balsamic onion compote
2 slices provolone cheese
1/4 ripe avocado, thinly sliced
1/2 medium-sized zucchini, thinly sliced lengthwise
1 tsp. olive oil

Saute zucchini in olive oil in a nonstick skillet over medium-high heat until softened and lightly golden. In the meantime, spread both slices of Arnold Natural Health bread with 1 tbsp. each of the onion compote. Starting with one slice, layer on a slice of the provolone, followed by the avocado, then the sautéed zucchini slices, followed by the second slice of provolone, and topped with the second slice of bread. Eat sandwich as is, or heat in a sandwich press until the cheese melts.
