The Minneapplewich - Semi-finalist, Arnold Healthy Sandwich Challenge of Minneapolis
Developed by Heidi Annexstad, Golden Valley, MN

8 slices Arnold Natural Soft Wheat bread, lightly toasted
1 large (12 oz.), Minnesota Honeycrisp (or any other firm apple), thinly sliced into 16 pieces
2 ounces of alfalfa sprouts, rinsed and dried
4 slices of sharp Minnesota cheddar, about 1 ounce each

For Spread:
3/4 cup walnuts, lightly toasted and chopped
8 tablespoons light cream cheese at room temperature

  • Make the spread: mix together the walnuts and cream cheese.
  • Spread 2 tablespoons of the cream-cheese mixture on each slice of bread.
  • Arrange 4 apple slices on each of 4 pieces of bread.
  • Put a piece of cheese over the apples.
  • Broil the cheese/apple bread until the cheese is bubbly and just starting to brown—about a minute or less.
  • Put 1/2 ounce sprouts on each cheese/apple slice, top with remaining bread, and enjoy!
Makes: 4 sandwiches
